So now that the summer heat is settling in, the last thing we want to do is bake a cake or cook a snack that will make us sweat buckets. If you sweat buckets at the beach that’s fine, but not while slaving away in the kitchen!
With that in mind, I wanted to share with you a favourite summer snack of mine: cue Fresh Raspberries with Lemon Ricotta on Toast. Sounds and tastes delish. Nothing says summer like a bunch of fresh berries, paired up with some rich ricotta, zesty lemon, and just a touch of honey to bring the whole thing together. Wanna make one?
Fresh Raspberries with Lemon Ricotta on Toast
Serves 1
Super easy, all you need is:
– 1 lemon
– A cup of ricotta cheese
– Honey
– Fresh raspberries
– Slice of bread of your choice (highly recommend getting a nice artisan loaf, for this recipe I used wheat free bread from a local boulangerie)
Make it!
Zest a bit of the lemon on the ricotta cheese, add about 1 tablespoon of honey and mix. Toast your bread, spread some of the ricotta mix on it, top it up with raspberries and if wanted, add an extra drizzle of honey. Sit and enjoy.
And hey, to be honest, I’ve had this for breakfast with a cup of tea. Amazeballs. Ok fine, I’ve had it for dinner too. Whatever, you will probably do it too. Don’t worry, I won’t tell anyone! It’ll be our zesty little secret ;)
