Perfect summer soup! Green, fresh, and vibrant from Jodi Moreno’s new book.
Food lovers, let me introduce you to the fantastic work of a dear friend and all around kitchen pro, Jodi Moreno. Her new cookbook ‘More with Less‘ is everything you need to make the tastiest of food with simple ingredients. I love the simplicity and big flavours in her recipes and as a long time fan of her food (seriously, have eaten it maaanny times) I am delighted to style a fave recipe from her book.
This recipe is what summer is all about: fresh, vibrant, glowing goodness!
Best of all, you don’t need to cook anything, just drop a few things in the blender and you’re good to go. Here’s the recipe:
Cucumber Avocado Gazpacho with Nori by Jodi Moreno
Serves 4
1/4 cup extra virgin olive oil
1/2 cup cup of water
2 tbsp white wine vinegar
1/2 tsp sea salt
Pinch of red pepper flakes
1/2 avocado
2 large cucumbers, chopped
1 tbsp diced shallots
1 small clove of garlic, minced
1 tbsp nori or/and sesame seeds
Drizzle of toasted sesame oil
Sea lettuce, kelp, and nasturtium to garnish (optional, I added that)
Add all ingredients except for the garnish in the blender. Blend until smooth, taste and adjust seasoning if necessary. Chill in the fridge for maximum 1 hour before serving. Divide among 4 bowls, and top each with sesame seeds, oil, and seaweed. This is best enjoyed immediately, but will keep for a day or two in an airtight container.
