Hey guys! I’m so so soo excited to share with you today all of my wonderful foodie discoveries at the Copenhagen Food Festival, which is part of my reinvention project with the HP Spectre.
Ok first of all, Copenhagen, I mean this city is just slap-me- in-the- face-am- I-dreaming fabulous, for reals; the design, the architecture, the fashion, and of course, the food!! No wonder why NOMA is there. It seems Danes live and breathe good design in all aspects of life (can you tell I fell in love with the city?).

Now, I had mentioned in my previous post with HP that I recently found myself with the need to reset and reignite my creative process and I chose Copenhagen as the catalyst of this creative revamp. I’m happy to say, it totally worked! The culture and food scene there is so different from what I’m used to experience in North America that it gave me that much needed jolt of inspiration. The experience started with a super Scandi looking Airbnb apartment I rented in Copenhagen (and later at the SP34 Hotel which is aces). I mean, just take a look at these interiors!
Seriously, I wanted to come back home and trash all the shit in my apartment, then I opened my credit card bill and was like “JUST KIDDING!”. So anyways, once I settled in
I got ready to hit the city and the Food Festival, which was insanely busy! (Think hundreds if not thousands of foodies all gathered at once, oh yiiiiis) The two key events that I wanted to attend where the Culinary Innovation Food Tour which took us around Copenhagen’s best restaurants to try the latest and the greatest in culinary creations (INSANITY). Dudes, I tasted literally every part of a pig (if you catch my drift), as part of the trend “nose to tail” which is taking over a lot of restaurants in Scandinavia, and what this means is basically be creative and use everything (animals or plants) and don’t waste a thing. Pretty clever, yes?
The second event was the New Nordic Cuisine Cooking Class, which was a personal fave (seen above). Nordic food?! What’s that? You mean I cannot put guacamole on this open face sandwich? I learned A TON in a short amount of time and I had the loveliest teacher and class buddies. I discovered new flavour combos which are very tasty, things like juniper berries with lemon on fish, or tarragon, mint and vanilla on baked goods. This class was so legit that we even baked danishes from scratch!
And don’t ask me about the dairy, I was dyiiiiing gurl, no lactose pills were able to help me from suffering an extreme allergic rash at the end of my trip, but you know what—it was so worth it. No pain no gain!
All this eating, and touring, and photographing left my brain bursting at the seams with ideas and inspiration so I had to take some breaks in between to go back to the apartment to write stuff down and document the experience using my handy travel companion the HP Spectre laptop—otherwise my brain would forget the details and overwrite them with the latest episode of The Gay Bachelor! Since it’s so sleek and lightweight, the HP Spectre was the perfect travel accessory — not to mention it matched all the gorgeous Scandinavian interiors!
I have a ton of recipes and design notes that I have to condense and bring to life in my next posts, so you can expect the following: a little Copenhagen guide (YAS KWEEN) and some recipes for dishes inspired by the city. And take it from me, if you haven’t been to Copenhagen yet, you gotta get there at some point. It’s so worth it!
